Welcome to Menu Plan Monday! Here are the things I need to take into consideration with menu plans: both me and my daughter are gluten-free and diary-free now. I’m eating meat regularly now, but I need to make sure it is the highest quality I can afford. That means organic, grass-fed, rather expensive stuff. I’m also watching my sugar intake and trying to keep it to 24 grams per day. Super hard, but I’m managing it! I’m also working on my gut health and that means trying to consume bone broth pretty much every day. That makes me feel like an old woman though, so I decided to make soup for my lunches and that works for me. SO there are the limits!
Breakfast: I pretty much stick with eggs, spinach, bacon, and hash browns almost every day. It’s easy, quick, and filling!
Lunch: the Princess has requested beans and hot dogs and I will be having soup. I vary the side dish: sometimes nuts, sometimes nut butter with celery, sometimes crackers with guacamole…but always soup! I’ll try to share the recipe later in the week. Soup is pretty easy to just throw together!
Dinner:
Pot roast, mashed potatoes (dairy free!), steamed veggies (probably brussels sprouts!) The roast is cooked in the crock pot and honestly I don’t use a recipe. A hunk of meat, some veggies, and a favorite spice blend and ta-da!
BBQ chicken, pasta salad We try to grill out regularly since it’s Florida and we’re barely into summer and that means crazy hot. I will probably enjoy my chicken without sauce to cut back on sugar. I am planning on using lentil pasta–we’ll see how that goes, as it has been ages since I tried pasta salad with gluten-free pasta.
Pancakes/waffles and sausages This is the first time I’ve tried any pancakes/waffles without any major sweetener. I have to decide between two recipes –this is one I’ve tried before and I love it with waffles: Huckleberry Lavender Paleo Pancakes
or these other ones that I haven’t tried, but have less sweetener: Flax Jacks Pancakes
I’ll report back next week which one was the winner! And don’t worry–there is no such thing as a huckleberry down here in Florida, so I’ve never made the syrup. It sounds super fancy though!
We’ll also have leftovers, some sort of pizza or other random meal, Sloppy Joes over baked potatoes and then an easy rotisserie chicken with a huge salad from the supermarket.
Now to go work out the shopping list and grocery shopping!
