Happy New Year everyone! I hope your celebrations were fun and relaxing! I celebrated my usual way–going to bed! I’ve also got a day of vacation, which is so nice.
The monthly them for the gluten-free menu swap over at Celiac Family is Happy & Healthy New Year! I’ll be doing what I always try to do–quick and healthy meals. I didn’t overly indulge over the holidays simply because I didn’t have the time to do the baking I usually do! However, maybe because it’s the middle of winter we haven’t been eating as many veggies as I would like. I purchased a produce box this week and hope to incorporate more veggies–the fresher the better!
School doesn’t start back until Tuesday around here, so we have a bonus day. I’m really ready for more structure and things for the Princess to do–she’s been a bit bored as she’s still not reading fluently and we’re not entertainers around here and that’s what she seems to want. There will be a lack of pictures for awhile because during one of her not-so-brilliant idea moments she broke my/the family camera. We started a fund to replace it, but have only gotten halfway there. Only halfway is amazing though!
