Happy New Year! I took a couple of completely unplanned weeks off blogging. Cleaning up from the great flu of 2014 was quite a project and then we had to do Christmas a couple of weeks late with family we missed out seeing due to being sick. I’m happy to report that everyone is back to their normal activities, although the evil cough is not gone yet.
The theme for the Gluten Free Menu Swap over Celiac Family is Specific Carbohydrate Diet. I actually have never heard of it, but it sounds interesting as it is supposed to reduce inflammation something that is always near the top of my mind.
Due to being sick so long and feeling overwhelmed with menu planning and cooking for picky eaters I decided to sign up for a menu planning service for the month of January. I decided to go with 7-Day Meal Plans by Lindsey Nixon. Her meal plans are vegan, gluten-free, and soy free. I figured they would be easy enough to add meat to if required and would get me eating more veggies besides providing me with a weekly plan for shopping and cooking ahead. My working schedule doesn’t allow me to be home cooking dinner every night and too often I would get home at 7:00 pm and not having anything ready to eat.
So all that to say I’m enjoying the experiment except for the excess oatmeal dishes for breakfast (but I knew that would be an issue going in!). This week we’re not following the meal plan as we have so many leftovers/meals I bought ingredients for that I haven’t made yet and are close to the end of the budget for the month already!

BBQ chicken/salmon, steak fries, corn on the cob
(There are several new options at the grocery store for gluten-free and HFCS free BBQ sauces!)

Hummus Toast with tomato
baked potato with re-fried beans and salsa

Italian Noodle Bowl
Triple Green Quesadillas (using this recipe for tortillas)
