The theme for the Gluten Free Menu Swap over at Celiac Family is gluten-free Portuguese food! Since some of my growing up was done in Portugal, I am a huge fan of Portuguese food. My absolute favorites are roasted chicken (I am hoping that I eventually heal enough to be able to eat this again!) and Portuguese soup. Portuguese soup is so awesome in that you can make it out of almost anything and it always tastes good unless you forget to add some salt–almost like stone soup! I’ve even made it Paleo friendly for a friend by using cauliflower instead of potatoes. It is on the menu this week and I can’t wait to sit down and have a huge bowl of that comfort food!
I made these snack balls last week and boy were they super yummy. I decided to try them because they didn’t have any nuts in them and neither did they have any oats in them. I was worried they would be weird, but they were a wonderful tasty snack. Apple Pie Balls–you should try them! And check back later in the week–I’ll finally be sharing my most favorite gluten-free pizza crust recipe!
