The theme for the Gluten Free Menu Swap over at Celiac Family is gluten-free Mexican food. I love Mexican food and love that it is so easy to prepare. This week we don’t have anything particularly Mexican on the menu, but I will probably hit up my stash of freezer burritos in the freezer or for a quick dinner whip up some nachos.
This week is back to normal, so I’m going to try to get most of the cooking done today or tomorrow for the week. Can you believe that we’re already into our fourth week of school? I’m hoping that some sort of routine is going to lock into place for us this week.
