My triumph of the week was getting my daughter to eat and enjoy dairy free cheese sauce! She was eating it by the spoonful, something she wouldn’t even try before. Now I just have to write down the measurements so I can share the recipe!
I decided to try these Apple Cinnamon Waffles last week in spite of the fact it’s not a gluten-free recipe. I just used my regular gluten-free flour mix and when the batter was a little more watery than it should be (I make waffles regularly, so I’m aware what the thickness of the batter should be!) I added some more flour until it had thickened up. They were super good, except the princess didn’t like the apple chunks. I just told her to pick them out.
The theme for the Gluten Free Menu Swap over a Celiac Family is Valentine’s Treats. I do love Valentine’s Day treats! In the past I’ve just done simple chocolate strawberries and I might do that again if I can find some good strawberries. (Most of the ones around here seem to be really green this year!) I am planning on making some soft sugar cookies with the Princess so she can practice her decorating skills. I will probably make some Valentine’s Day eggs in toast sometime this week also!
We’re cooking from the pantry this week other than the fresh veggies I got at the farmer’s market. We have a well stocked fridge and freezer and I planned too many meals for last week so it’s a great week not to go shopping.
Sunday
Breakfast: Larabars
We might get up in time to get to church and have a decent breakfast one of these Sunday’s, but for now I am thankful for something in the freezer that we can grab and go!
Lunch: Steak sandwiches for the others, sweet potato and regular potato french fries, sautéed beet greens with onions and mushrooms
Dinner: roasted beets with balsamic vinegar, fish, popcorn, chocolate syrup
