A new year–a perfect time to renew your commitment to menu planning! We had a good week last week. A week of nothing and a little too much rain. We even took the Princess to see her first Disney movie, “Frozen” due to the too much rain part. However, with all the nothing last week, we were certainly ready to jump back into work and school this week!
The theme for the Gluten Free Menu Swap over at Celiac Family is something new this week. I’m not sure what my something new is going to be this year. I do know that I would like to do the divided kitchen thing a little bit better. Sometimes it seems like I have to fix three separate meals because I can’t eat so many things and my husband and little princess are terribly picky. I’m not sure how I’m going to do it, but I would like to find some more recipes that perk their interest, but still fall within the safe to eat category for me. Along the same line I would like to do better at using up leftovers. Right now we usually have each meal twice, but lately it seems like no one likes the meal the first time and I have to figure out how to eat the same leftovers 4 different times. No fun!
We enjoyed the filling for the egg rolls last week, but we didn’t like the rice wrappers. I want to try it again sometime with a different sort of wrapper. The filling was so yummy that I might just use that with seasonings in a stir fry sometime! I managed to stock the freezer with waffles, pancakes, breakfast cookies, and some muffins last week! Along with my gift of protein bars I think we’re set for breakfasts!

Breakfast: protein bar crumbled with strawberries and kefir on top with cinnamon raisin toast
Lunch: steaks (salmon for me), baked potatoes, broccoli, sautéed mushrooms and onions
Dinner: Popcorn, leftover egg rolls, grape tomatoes and cucumber dipped in hummus
