I had a lovely week last week suffering from a staggering cold! It came out of nowhere and laid me out flat for most of the week. Thank goodness for a good stock of soup in the freezer and a wonderful husband who can cook! I also came up with an interesting way to treat a sore throat which I’ll share later this week.
The theme for the Gluten Free Menu Swap over at Gluten Free Week sweet potatoes. We love sweet potatoes at my house or as the Princess calls them orange potatoes. We are having some sweet potato fries, I might sneak in this sweet potato soup and I am definitely planning this sweet potato casserole sometime during this holiday season!
So this week I didn’t make it to the farmer’s market (yes, we have farmer’s markets all year-long in Florida!) and therefore I have no fresh veggies. Yikes! I do a small stash of frozen so I should be okay. There will be some repeats from last week due to the sniffles.

Breakfast: poached eggs on toast
Lunch: Husband’s crock pot chili with cornbread
Dinner: snacks

French toast
Eggs
Smoothie
Maybe these banana donuts if I get my energy back!
Dinner:
Breakfast for dinner: egg salad with bacon (coconut bacon for me!)
steak sandwiches with sweet potato fries, roasted broccoli, sautéed onions & peppers & mushrooms
Tacos (with mushrooms or butternut squash instead of meat for me!)
Broccoli with rice
Either stir fry or Sweet Potato Soup
Tuna Apple Salad
Pizza, Salad
Smoothie (Clean out the freezer smoothie!), popcorn
Fish with a honey balsamic vinegar sauce, rice pilaf, veggie
