We stuck pretty well to our menu plan last week. We definitely cleaned out the fridge before going shopping yesterday! I did make a treat that wasn’t on my menu plan–these Almond Butter Rice Crisp Treats! They were a delectable addition to several meals. This week I will be working mornings as I fill in for someone on vacation. This isn’t such a big deal, but it usually cuts down on my desire to be extra creative in the kitchen. There just isn’t as much time, so I kept things simple and brought out simple easy favorites. Now onto this week’s menu:
The theme for the GF Menu Swap over at Celiac Family this week is oranges. I don’t have anything in particular on the menu with oranges, but we have a nice bunch leftover from the blueberry orange muffins from last week. We will eat the oranges plain or maybe make those muffins again as they were quite yummy! We went blueberry picking this past week so we have extra berries also! Here’s the rest of this week’s plan:
Sunday
Breakfast: German Puff Pancake from "Gluten Free On a Shoe String Quick and Easy" with strawberries and blueberries
Lunch: burgers with Udi's gluten-free buns, corn on the cob, potato salad, roasted asparagus, tomato and onion slices
Dinner: Still pretty full from the large dinner, but maybe some potato salad and other leftovers

Maybe: Low Sugar, Whole Grain Blueberry Orange Muffins
Leftover German Puff Pancake
Leftover Apple Banana Buckwheat Muffins
Smoothie–Maybe a mixed berry smoothie

Roasted Red Pepper and Kale Frittata

Beans & Rice
Spaghetti, salad
Stir fry with shrimp over rice
Hawaiian Chickpea Teriyaki from “Happy Herbivore”
Pizza, Salad
Smoothie, Popcorn
And of course…LEFTOVERS!
